Remember my 4th of July post? This is the chicken that was on my menu, and it is my favorite way to do chicken.
What you Need:
Chicken Breasts (I use boneless, and skinless because bones freak me out)
McCormick Grill Mates Barbecue Seasoning
Stubbs BBQ Sauce
Swiss Cheese
Bacon (Cooked)
What to Do:
Take your un-thawed chicken and cut a slit in it on the fatter breast side.
Next take the Grill Mates Seasoning and sprinkle it generously on the chicken.
I let it sit for a bit, you can even kind of rub it in with your hands.
Now take the Stubbs BBQ sauce and pour it all over the chicken.
Now let it marinate in the fridge for at least 30 minutes.
After marinating, put in a preheated (400 degree) oven for about 20 to 30 minutes.
In the mean time, fry up your bacon. I usually do 2 or 3 pieces of bacon per chicken breast.
Take the chicken out of the oven. Remember the cut we made in the beginning? Now is the time to stuff it with Swiss Cheese and our bacon.
Now time to put it on the grill. The chicken is pretty much cooked, I like to throw it on the grill to get the cool grill marks and a little bit of the grilled flavor. Leave it on the grill until the cheese melts completely. Serve it up! SO GOOD ;)
